Hokitika wildfoods festival:

Every second Weekend of March here in New Zealand, is the Hokitika Wildfoods Festival. Visit the official Festival website at www.wildfoods.co.nz.

March, in New Zealand also see's the Hokitika Wildfood's Festival. A celebration of all the wildfoods that are in abundance here where I have made my home. It's a festival over the years I have had a lot to do with, normally I run public cooking demonstrations.

Last year it was 'wild' ways of cooking, at which I demonstrated various aspects of molecular cuisine. This year I am concentrating on traditional Maori fare, but with a modern twist.

Twenty thousand people all coming to try and taste foods that have either been shot, gathered, netted, speared or just collected from the wild. Then there are the 'wild' wildfoods, foods that that may (or may not) be native to the West Coast of New Zealand but, well have that fear factor to them, like worm sushi, huhu grubs (a large maggot like creature that tastes like peanuts), pickled scorpions and lots, lots more.

Unlike many if not most countries, it is so easy to collect your own foods if required. Lobster, scallops, mussels, oysters are in abundance, along with other shellfish and fish, (no licence required) just laws as to the amounts and size taken. If you have a gun licence you can go shoot a wild boar, deer, chamois, thar or goat anytime of the year.

The recipe section contains dishes that either celebrate New Zealand, its indigenous people or for some "wildfoods", but nothing too drastic, well maybe one or two for interest sake.
