day recipe:

chocolate
madeleines
ingredients
butter 60 gm
flour 60 gm
cocoa 2 tbs
eggs 2 pc
castor sugar 50 gm
ground cinnamon ½ tsp
production
- Butter and flour madelaines moulds (these are shell
like shapes) and set aside
- Melt the butter and stir in the flour and cocoa ensuring
there is no lumps
- Whisk the eggs, sugar and cinnamon together until pale
and frothy
- Fold the butter mixture into egg mixture
- Place mixture into a piping bag and pipe into moulds
- Bake in a 180°C preheated oven for 10 minutes or
until a skewer/knife comes out clean
- Remove from moulds immediately and cool on a cooling
rack
- Dust with cocoa or icing sugar
