valentine's day recipe:

chocolate fudge

ingredients

sugar - castor 400 gm
cream 250 ml
butter 60 gm
water 45 ml
milk 125 ml
chocolate 225 gm

production

  1. Place the sugar, cream, butter, water and milk into a heavy pan and place over a low heat
  2. Stir until the sugar is completely dissolved.
  3. Break in the chocolate and stir until it thoroughly melts
  4. Turn up the heat and bring the mixture to the boil
  5. Continue until it reaches 114°C (240°F), known as the soft ball stage (when a teaspoonful is dropped into a saucer of cold water, it forms a soft ball)
  6. Remove from the heat and beat the mixture with a wooden spoon until it thickens
  7. Pour the mixture into an 20cm square cake pan, lightly greased with butter
  8. Leave to set
