day recipe:

ingredients
sugar - castor 400 gm
cream 250 ml
butter 60 gm
water 45 ml
milk 125 ml
chocolate 225 gm
production
- Place the sugar, cream, butter, water and milk into
a heavy pan and place over a low heat
- Stir until the sugar is completely dissolved.
- Break in the chocolate and stir until it thoroughly
melts
- Turn up the heat and bring the mixture to the boil
- Continue until it reaches 114°C (240°F), known
as the soft ball stage (when a teaspoonful is dropped
into a saucer of cold water, it forms a soft ball)
- Remove from the heat and beat the mixture with a wooden
spoon until it thickens
- Pour the mixture into an 20cm square cake pan, lightly
greased with butter
- Leave to set
