  1. Select garlic cloves that are similar in size and toss in a little olive oil and season
  2. For a whole garlic bulb:
        slice off the top
        drizzle with olive oil and season
  3. Gently heat a frying/sauté pan, add a small amount of oil
  4. Carefully place in the garlic cloves or bulb
  5. Place in the oven (180ºC) and roast until soft
        approximately 10 minutes (cloves)
        approximately 15 - 20 minutes (bulb)
  6. Remove from the oven

chef notes:

If using as a garnish:

  • keep warm until required (will only hold for approximately 10 minutes as after this they will begin to shrivel and look unappetising )

If using for purée:

  • allow to cool
  • gently squeeze the flesh out of the skin and either mash with a fork or pass through a fine wire sieve
