valentine's day recipe:

courgette fritters

ingredients

courgettes 200 gm
spring onions 1 pc
garlic clove 1 pc
eggs small 2 pc
flour 2 tbs
baking powder ½ tsp

production

  1. Grate courgettes into a bowl
  2. Finely chop spring onions and garlic and add to courgettes
  3. Break in the egg and combine
  4. Add in the baking powder and sufficient flour to form a light batter
  5. Heat a little oil in a pan
  6. Place large spoonfuls of mixture into pan and cook gently until golden brown
  7. Carefully turnover and cook second side until golden brown
  8. Remove from pan and place on a paper towel to drain
  9. Serve while still hot

chef notes:

Serve with a salad of chopped avocado and crumbled feta.
