wood oven baked potato with rosemary

ingredients

potatoes
fresh rosemary stalks
melted butter or seasoned extra virgin olive oil

production

  1. With a skewer drill a hole through the centre of the potato
  2. Dip a fresh rosemary stalk in some melted butter or seasoned extra virgin olive oil
  3. Push the rosemary stalk into the hole
  4. Season lightly and wrap in tin foil
  5. Bake in a hot oven (220°C) until soft to the touch

chef notes:

Ensure the potato is of a floury variety and not waxy.

The potatoes may be lightly coated with olive oil or melted butter if
preferred before wrapping.

Ensure the rosemary leaves are pointing towards you and not the potato when inserting or they will be either stripped off or make it hard to insert.
