valentine's day recipe:

crab parcel with ginger

ingredients

fresh root ginger 15 ml (finely diced)
wakame seaweed 5 gm (soaked, drained and finely chopped)
small carrot 1 pc (brunoise)
small courgette 1 pc (brunoise)
small red pepper 1/4 pc (brunoise)
sake 75 ml
fish sauce 15 ml
rice vinegar 15 ml
dressed crab 225 gm
lemon juice 5 ml
fresh coriander leaves 8 pc (finely chopped)
cold water 30 ml
cayenne pepper sq
nori sheets 4 pc
long chives or strips of leek 4 pc

  1. Mix together the ginger, seaweed, vegetables, 50ml (2 fl oz) sake, fish sauce and vinegar. Season and marinate for 24 hours.
  2. Combine the crab, lemon juice, coriander, water and cayenne and season.
  3. Brush the sheets of nori seaweed with the remaining sake. Divide the crab mixture between each sheet. Bring the corners together and tie with the chive or leek ribbons
  4. Deep fry in hot oil for 3 minutes, ensuring that the seaweed is crisp.
  5. Drain.
  6. Arrange the vegetables in the centre of each plate. Place a crab parcel on top and serve.
