valentine's day recipe:

beef stroganoff

ingredients

fillet mignon 600 gm
shallots 3 pcs
brandy 100 ml
sour cream 200 ml
button mushrooms 10 pcs
gherkins 1 pcs

production

  1. Cut fillet into strips
  2. Finely dice shallots, slice mushrooms and cut gherkin into julienne
  3. Melt some butter over a medium heat and sweat off shallots
  4. Add fillet, increase heat and quickly brown
  5. Flambé with brandy
  6. Add sour cream, and bring to a gentle boil, allow to reduce slightly
  7. Add mushrooms and gherkins, stir through
  8. Correct seasoning
  9. Remove from heat and serve immediately

chef notes:

Cooking time from start to finish should be approximately 7 minutes.

Sour cream maybe substituted for fresh cream with a little lemon juice added.
