day recipe:

beef
stroganoff
ingredients
fillet mignon 600 gm
shallots 3 pcs
brandy 100 ml
sour cream 200 ml
button mushrooms 10 pcs
gherkins 1 pcs
production
- Cut fillet into strips
- Finely dice shallots, slice mushrooms and cut gherkin
into julienne
- Melt some butter over a medium heat and sweat off shallots
- Add fillet, increase heat and quickly brown
- Flambé with brandy
- Add sour cream, and bring to a gentle boil, allow to
reduce slightly
- Add mushrooms and gherkins, stir through
- Correct seasoning
- Remove from heat and serve immediately
chef notes:
Cooking time from start to finish should be approximately
7 minutes.
Sour cream maybe substituted for fresh cream with a little
lemon juice added.
