valentine's day recipe:

madeira sauce

ingredients

Madeira 300 ml
beef stock 100 ml
arrowroot sq

  1. Place Madeira and beef stock in a saucepan
  2. Bring to a boil and simmer gently until it has reduced by half
  3. Mix approximately 1 tablespoon of arrowroot with 3 tablespoons of water and slowly whisk into the sauce until lightly thickened

chef notes:

It is important that the sauce is simmering while adding the arrowroot.

It is also important that the arrowroot is added slowly until the correct consistency is reached, adding too much will result in the sauce becoming gel like (which cannot be undone).
