valentine's day recipe:

grapefruit cocktail with passionfruit

ingredients

grapefruit - pink fleshed 2 pc
passionfruit 1 pc
campari 2 tbs
sugar - castor 1 tbs

soup production

  1. Top and tail grapefruits
  2. Remove peel and pith
  3. Segment
  4. Place segments into a bowl and sprinkle with passionfruit pulp, campari and sugar
  5. Allow to marinate in the chiller
  6. Serve in a martini glass with cinnamon toast

chef notes:

If fresh passionfruit is not available, tinned passionfruit pulp or
passionfruit ice cream topping can be used.
