valentine's day recipe:

fruit consommé with hazelnut ravioli / wontons

ingredients

egg white 6 pc
orange juice 200 ml
grapefruit juice 200 ml
apple juice 200 ml
apricot or peach juice 200 ml
sugar syrup 200 ml
passion fruit juice 100 ml
vanilla bean 1 pc
piece of crushed lemongrass 5 cm

hazelnut praline paste 150 gm
cream 75 ml
unsweetened praline paste 50 gm
wontons wrappers 10 sq

soup production

  1. Whisk the egg white until slightly frothy, combine with all the ingredients and stir continuously to a boil
  2. Simmer until clarified
  3. Carefully strain and chill

wonton production

  1. Whisk together hazelnut paste and heavy cream
  2. Mix in the praline
  3. Cut wontons wrappers into rounds, pipe filling into the centre of 10, brush edges with water, place another wrapper on top and form ravioli
  4. Poach in a stock syrup and chill or deep fry and serve warm

at service

  1. Place a large quenelle of a fruit sorbet into a bowl and pour in consommé to only three-quarter cover quenelle
  2. Secure a ravioli or wontons on top of the quenelle
  3. Finish with a sprig of mint
