day recipe:

fruit
consommé with hazelnut ravioli / wontons
ingredients
egg
white 6 pc
orange juice 200 ml
grapefruit juice 200 ml
apple juice 200 ml
apricot or peach juice 200 ml
sugar syrup 200 ml
passion fruit juice 100 ml
vanilla bean 1 pc
piece of crushed lemongrass 5 cm
hazelnut praline paste 150 gm
cream 75 ml
unsweetened praline paste 50 gm
wontons wrappers 10 sq
soup production
- Whisk the egg white until slightly frothy, combine with
all the ingredients and stir continuously to a boil
- Simmer until clarified
- Carefully strain and chill
wonton production
- Whisk together hazelnut paste and heavy cream
- Mix in the praline
- Cut wontons wrappers into rounds, pipe filling into
the centre of 10, brush edges with water, place another
wrapper on top and form ravioli
- Poach in a stock syrup and chill or deep fry and serve
warm
at service
- Place a large quenelle of a fruit sorbet into a bowl
and pour in consommé to only three-quarter cover
quenelle
- Secure a ravioli or wontons on top of the quenelle
- Finish with a sprig of mint
