valentine's day recipe:

chilled melon

ingredients

melon - chanteraise 1 pc
chilled white stock 250 ml
whole nutmeg sq
parma ham sq

production

  1. Cut melon in half, remove pips and discard, scoop out flesh
  2. Place in liquidiser and puree, add sufficient stock to obtain correct consistency (not all may be needed)
  3. Chill until required
  4. Pour into chilled soup cups, frozen margarita glasses or the scooped out melon halves
  5. Place some julienne (finely sliced strips) of parma ham on top and grated nutmeg

chef notes:

There are many variations on the theme, included here is a basic fruit soup that may be added to, or altered to suit one's taste, refreshing served on a hot summers day. In Germany they are known as kaltschale.
