- chanteraise 1 pc
chilled white stock 250 ml
whole nutmeg sq
parma ham sq

- Cut melon in half, remove pips and discard, scoop out
flesh
- Place in liquidiser and puree, add sufficient stock
to obtain correct consistency (not all may be needed)
- Chill until required
- Pour into chilled soup cups, frozen margarita glasses
or the scooped out melon halves
- Place some julienne (finely sliced strips) of parma
ham on top and grated nutmeg

There are many variations on the theme, included here
is a basic fruit soup that may be added to, or altered
to suit one's taste, refreshing served on a hot summers
day. In Germany they are known as kaltschale.
