plain jane cooking - recipes for the novice:

  1. Melt the butter in a saucepan over a low heat
  2. Chopped the onion and garlic and add to the butter, cook over a low heat for approximately 5 minutes until softened and cooked (stir frequently)
  3. Add the flour and stir in, cook for 2 - 3 minutes
  4. Add the tomatoes with the tin juices (these can be blitzed in a food processor before adding if preferred or use tinned that are already pre-chopped
  5. Increase heat slightly and simmer for 15 minutes
  6. Remove from heat and pour into a food processor and blitz until it is as smooth or as chunky as you prefer
  7. Place back into saucepan and reheat until simmering
  8. Taste and season with salt and pepper or sprinkle in some instant chicken stock powder or a chicken oxo cube
  9. Add cream if using

chef notes:

To give the basic soup a twist add the following just before serving

¼ cup mascarpone
¼ cup sour cream
¼ cup cream cheese
  ¼ cup crumbled stilton or other blue cheese
  fried garlic slices
  garlic, celery or onion salt
  strips of sundried tomatoes
  thai sweet chilli sauce
  shredded basil leaves
  chopped coriander
