plain jane cooking - recipes for the novice:

mushroom soup

ingredients

mushrooms
butter
flour
chicken stock
cream
angostura bitters - optional

  1. Melt the butter in a saucepan over a low heat
  2. Add the rinsed mushrooms cut in half
  3. Cook gently for 5 minutes
  4. Add the flour and stir to combine
  5. Add the stock and cream and bring to a simmer
  6. Simmer for 10 minutes
  7. Pour into a liquidiser and blitz until smooth
  8. Return to saucepan and bring back to a simmer
  9. If you use angostura bitters add just a few drops and stir through, you will be amazed at the boost this gives the soup
  10. Taste, season and serve

To give the basic soup a twist add the following just before serving

  • mascarpone
  • sour cream
  • cream cheese
  • crumbled stilton or other blue cheese
  • fried garlic slices
  • garlic, celery or onion salt

Angostura bitters can be added t any mushroom based dish, or even
fried mushrooms, it gives the mushroom flavour an amazing lift.
