plain jane cooking - recipes for the novice:

chicken cream soup with sweetcorn

ingredients

left over cooked chickens
butter
onion
flour
sweetcorn kernels
chicken stock
cream

  1. Shred the chicken into small pieces or strips
  2. Melt the butter in a saucepan over a low heat
  3. Add the sliced onion and cook until soft
  4. Add the four and stir to combine, cook gently for 2 minutes
  5. Add the sweetcorn and chicken, the stock and cream and simmer for 5 minutes until thickened
  6. Taste, season and serve
