plain jane cooking - recipes for the novice:

roast chicken stuffing with apricots

  1. Tear the bread (including crust) and place in a large bowl
  2. Sweat off the finely chop onion and finely sliced apricots in olive oil or butter
  3. Add to the bread, including any oil/butter used for sweating
  4. Add sufficient boiling water to form a stiff paste (this mixture must not be overly moist)
  5. Taste and correct seasoning
  6. Grease a sheet of tin foil well with oil or butter
  7. Form the stuffing into a basic sausage shape along the edge of the tinfoil and roll up (leaving a 5-10 cm gap at the ends
  8. Twist the ends to seal
  9. Place on a tray in the oven to cook for 30 minutes, rotate/turn every ten minutes to prevent the base burning
  10. Remove carefully from oven and allow to cool slightly before unwrapping
  11. Slice to serve
