- Tear the bread (including crust) and place in a large
bowl
- Sweat off the finely chop onion and finely sliced apricots
in olive oil or butter
- Add to the bread, including any oil/butter used for
sweating
- Add sufficient boiling water to form a stiff paste (this
mixture must not be overly moist)
- Taste and correct seasoning
- Grease a sheet of tin foil well with oil or butter
- Form the stuffing into a basic sausage shape along the
edge of the tinfoil and roll up (leaving a 5-10 cm gap
at the ends
- Twist the ends to seal
- Place on a tray in the oven to cook for 30 minutes,
rotate/turn every ten minutes to prevent the base burning
- Remove carefully from oven and allow to cool slightly
before unwrapping
- Slice to serve
