chicken pie with butter chicken

ingredients

boneless chicken breasts
butter
onion
butter chicken sauce
cream
mixed veg - frozen
creamy mashed potatoes
or
cheesy pastry

  1. Warm butter in a large saucepan
  2. Add the onions and cook over a low heat for 5 minutes until softened
  3. Cut the chicken into bite sized pieces and add to the butter, cook gently until it changes colour and turns white on the outside
  4. Add the sauce, the cream, the vegetables
  5. Simmer on stove for approximately 10 minutes
  6. Pour into a casserole or pie dish
  7. Cover with the mashed potato or pastry (rolled approx 3mm thickness)
  8. Bake at 170°C for one hour

chef notes:

Ready made butter chicken is readily available in supermarkets these
days.

A chopped clove of garlic may be added with the onions.
