plain jane cooking - recipes for the novice:

easy peasy berry trifle

ingredients

sponge - ripped
berries of choice
sherry, brandy or bourbon
meringue nests - broken
custard
cream

  1. Place the sponge in a bowl and cover with the berries and their juices
  2. Sprinkle over the alcohol if using
  3. Cover with the broken meringue nests, crumble smaller if preferred
  4. Pour over the custard
  5. Whisk cream just past the liquid stage (do not over whip)
  6. Cover the custard
  7. Before chilling it can be finished with either:
    • chocolate chips
    • grated chocolate
    • chocolate sprinkles or 100's of 1000's
    • toasted flaked almonds
    • toasted hazelnuts (crushed with a rolling pin or blitzed in a food processor)
