but an eating cheese will taste better once the chill
has been taken off.

Most
if not all blue cheeses taste wonderful when eaten with
honey. Of course the better quality the cheese is the
better quality the honey should be.

cheddar should be discarded

Unless
it has been left far too long, the mould should only be
on the surface of the cheese. Trim it away and the cheese
below is perfectly edible and indeed safe to eat.
