desserts - cold recipe:

candied apple or pear slices (crisps)

  1. Pre-heat oven (convection) to 100°C

syrup

  1. Combine the sugar and water and simmer to form a light syrup
  2. Remove from heat and allow to cool

  1. Core the fruit (peeled or unpeeled depending on personal taste)
  2. Slice paper thin on a mandolin

  1. Cut in half (without coring) carefully remove any pips
  2. Slice paper thin on a mandolin

or

  1. Cut in half (without coring) carefully remove any pips
  2. Cut each half in half again
  3. Slice paper thin with a knife

to cook

  1. Dip into the sugar syrup
  2. Lay onto a silicon mat (on a tray)
  3. Place into the oven for approx 1 hour until crisp and dried
  4. Remove and allow to cool before removing from the mat
  5. Store in an airtight container
