- Pre-heat oven (convection) to 100°C

- Combine the sugar and water and simmer to form a light
syrup
- Remove from heat and allow to cool

- Slice paper thin on a mandolin

- Slice paper thin with a knife
to cook
- Dip into the sugar syrup
- Lay onto a silicon mat (on a tray)
- Place into the oven for approx 1 hour until crisp and
dried
- Remove and allow to cool before removing from the mat
- Store in an airtight container
