desserts - cold recipe:

rice or potato flour cake (foaming method)

ingredients

potato flour or rice flour ¾ cup
sugar ½ cup
egg yolks 8 pc
egg whites 9 pc

production

  1. Preheat oven to 175°C
  2. Flour a 22cm cake tin
  3. Sift together 3 times or more the flour and sugar
  4. Beat yolks until light and creamy, stir these into flour mixture
  5. Whip egg whites until stiff but not dry
  6. Fold the egg whites into the flour mixture by hand, gently but rapidly
  7. Bake about 45 minutes (or until done)
  8. Cool upside down, as for angel food cake
  9. Frost or finish as required
