desserts - cold recipe:

apple sauce cake (creaming method)

ingredients

margarine ½ cup
honey 1 cup
water 1½ tbs
oil 1½ tbs
baking powder 1 tsp
vanilla essence 1 tsp
finely ground almonds 2¼ cup
arrowroot 2 tsp
baking soda 1 tsp
cinnamon 2 tsp
salt ½ tsp
nutmeg ½ tsp
raisins 1 cup
unsweetened applesauce* 1 cup

  1. Preheat oven to 165°C
  2. Grease bottom only of a 9 x 13 x 2 pan
  3. In a large bowl, cream margarine, gradually add honey, beating until light and fluffy
  4. Add water/oil/powder mixture and vanilla, mixing well.
  5. In a medium bowl, stir together dry ingredients.
  6. Coat raisins with 1 tablespoon flour (keeps them from sticking together and settling to bottom) Set aside.
  7. Add dry ingredients to butter/honey mixture, alternating with applesauce blend well, stir in
  8. raisins, pour batter into pan.
  9. Bake 165°C for 35 minutes or until cake tests done in centre
  10. Cool completely and frost if desired.
