desserts - cold recipe:

digestive biscuit

ingredients

egg whites 125 ml
castor sugar 250 gm
desiccated coconut 250 gm
plain flour 30 gm

production

  1. Mix all the dry ingredients in a bowl
  2. Rub in the butter
  3. Mix in a sufficient quantity of milk to bind the mixture
  4. Allow the dough to rest in the fridge
  5. Roll out the mixture with a rolling pin and dock to prevent air pockets forming underneath during baking
  6. Cut to the required size using a round cutter and place onto a baking sheet lined with silicone paper or a silicone mat
  7. Bake in a moderate oven 180°C for approx 15 minutes
