Add enough wine to make a stiff but workable dough
Roll into a ball and allow to rest for an hour
Roll out dough very thin and cut into 12cm
Place cannoli tube (see notes) across the corners of
the square. First fold one corner around the tube, then
the other corner and press the corners together
Deep fry one at a time until a dark golden brown
Remove carefully and let cool completely before filling
chef notes:
Cannoli tubes can be found at speciality stores, or use
an
aluminium or stainless steel tube from the hardware store,
20cm long and 3cm thick.
A wooden broom or mop handle cut to length may also be
used.
