Jams, marmelades, pickles, chutneys these are all termed preserves, and for a good reason. They were originally made to preserve an abundance of foods for later use, when not in season.

With that in mind, we literally do not need preserves as we once did. But they are ingrained into us now and form a part of our day to day lives, what is a piece of toast with jam or cold meats without pickles?

Preserves are usually defined as:

  chowchow pickled vegetables in a highly seasoned mustard sauce
  chutney derived from the Hindi word "chatni", a variety of sweet and spicy condiments made of chopped fruits or vegetables cooked in vinegar and sugar with ginger and spices
  pickles vegetables preserved in vinegar and spices
  relish a condiment of chopped sweet chutney
  conserve a jam that contains whole small fruits (berries) or chunks of fruits
  fruit butter similar to a jam, but the fruit is pureed and less sugar. It has a thick, spoonable consistency and no pectin
  fruit curd similar to a jam, but made from citrus fruits, and with egg yolks as a thickening agent
  jam fruits or vegetables cooked and preserved with sugar, often cooked to a puree
  jelly similar to a jam, but clear in consistency and set
  marmalade similar to a jam, but made with citrus fruits and has a bitterness to it
