The British have their puddings & kedgeree, the Chinese their fried rice, the French their pilaf, the Italians their risotto, the Spanish their paella, the Japanese their sushi ….. is there a country where rice is not used and a country that does not have a rice speciality?

There are that many different types of rice, it is small wonder it is so wildly used and popular, ftom short to medium to long grain. Varieties include:

  kome short grain used for sushi
  arborio medium/short grain used for risotto
  basmati long grain a perfumed rice perfect for Indian and Thai dishes
  wild long grain a black rice
  jasmine long grain aromatic with a distinctive aroma and flavour similar to that of popcorn or roasted nuts. Cooked grains are soft, moist and cling together.
